pancetta

Pancetta is similar to bacon. It's cut into little pieces. At Fresh and Easy it's in little packages just like the sandwich ham and turkey meats. At the regular grocery store it's probably with the deli meat section or the bacon section. It added a really good taste to the soup. If you can't find it I think you could cut bacon into little tiny pieces before sauteeing it like the first step of the recipe says. (don't use prociutto, that's something different).

Yummy recipe

I tried a new recipe last night, mm mm good (if you like clam chowder, that is). We all really liked it, so I thought I'd share it for any of you that are sick of the clam-less canned clam chowder. If you're going to make it, don't leave out the fresh thyme, that really made the flavor extra fresh-tasting.

Clam Chowder
4 (6.5 oz.) cans clams
6 oz. diced pancetta ( I got this at Fresh and Easy)
3 Tbsp. butter
1 yellow onion, diced
2 celery stalks, diced
2 garlic cloves, minced
2 tsp. chopped fresh thyme
2 Tbsp. flour
4-5 medium potatoes, peeled and diced
2 bay leaves
1 cup heavy cream
2 tsp. Worcestershire sauce
salt and pepper to taste
pinch of cayenne pepper
Drain clams, reserve liquid and add water to it to make 5 cups. Set aside. In soup pot over medium heat, saute pancetta 5 minutes. Add butter and let melt. Add onion, celery, garlic and thyme; cook about 5 minutes. (your kitchen will start to smell really yummy now!) Add flour, cook 1 minute more. Add clam juice/water mixture, potatoes and bay leaves; bring to a boil. Reduce heat; simmer until potatoes are tender, about 15 minutes. Stir in cream, Worcestershire sauce, salt, pepper and cayenne. Heat through, about 3-5 minutes. Add clams; cook 2 minutes. Ladle into bowls and serve with crusty bread - delish!

A LITTLE BIT OF NEWS

WE HAVE A NEW PROJECT. WE JUST CAME BACK FROM SAFFORD WITH A LOAD OF BRICK PAVERS. AFTER MUCH DISCUSSING, LOOKING AT PICTURES, MEASURING, FIGURING, DISCUSSING, PLANNING ETC., WE DECIDED TO DO SOMETHING ABOUT THE AREA BETWEEN THE BACK OF THE HOUSE AND 'THE NEST'. WE FIRST THOUGHT ABOUT COVERING IT WITH FLAGSTONE, BUT FINALLY DECIDED TO MAKE A PATHWAY AND A SMALL SITTING AREA AT THE BACK OF THE SPACE, AND THEN DAD IS GOING TO BUILD SOME GROW BOXES TO GO ALONG THE SIDES. WE HOPE TO ACCOMPLISH THIS IN A WAY THAT NO WEEDS WILL GROW UP THROUGH THE BOXES. WE ARE THEN GOING TO TRY GROWING VEGETABLES, SOME FLOWERS, WHATEVER WE CAN COME UP WITH. IT IS NICE WEATHER TODAY, AND I HOPE WE CAN GET THIS FINISHED BEFORE IT TURNS HOT, WHICH WON'T BE LONG NOW. WISH US LUCK!

WE WENT TO TUCSON ON SATURDAY. WE DID A LITTLE SHOPPING AND ATE AT 'LONG JOHN SILVERS'. THEN WE WENT TO THE CONCERT FOR THE REGIONAL CHOIR THAT JARED WAS IN. IT STARTED AT 5:00, WHICH WAS GOOD. IT WAS REALLY GOOD AND NOT TOO LONG. DR. LUNT LED THE CHOIR. HE IS SUCH A HAM. DARVIL & TERESA HAD SPENT FRI. NIGHT IN MESA, SO THEY CAME AROUND THAT WAY.

TODAY WAS NORMA NATIVIDAD'S FUNERAL. SHE HAD 7 CHILDREN AND 7 BROTHERS AND SISTERS, ALL STILL LIVING, SO I'M SURE THERE WAS A BIG CROWD. THE CANCER STARTED IN HER LEGS AND WAS VERY AGGRESSIVE. SHE WASN'T SICK VERY LONG.

SATURDAY IS FAWN BRYCE'S FUNERAL. SHE HAD A MASSIVE STROKE AND DIDN'T LINGER LONG AFTERWARD. SHE NEVER FULLY RECOVERED FROM THE STROKE SHE HAD A FEW YEARS AGO. ROGER SMITH, HER BROTHER, STILL CAN'T SPEAK AFTER THE STROKE HE HAD. I GUESS STROKES RUN IN THAT FAMILY.

BECKY, THE BLOG ALWAYS LOOKS SO CUTE! YOU DO A GOOD JOB.

SIGNING OFF FOR NOW, LOVE, MOM

Happy Birthday Darvil

First of all, HAPPY LATE BIRTHDAY DARVIL!!!!!! I told Darv to check the blog out on his Birthday which was Saturday. I was going to put a birthday background on and do some sort of Darvil tribute. Did I do it? No, I forgot. Curse that memory of mine!! As it turns out, I don't have too many pictures of Darvil for some reason. Darv, where are you when I have my camera around?!?! Well, at least you look young even though you're... Dare we say it? 47!! Wholy Moly. Hope you had a great birthday, big (always older) brother!

Grandpa is a little lacking in putting things on the com puter.
I tried to post a comment to Amanda's obtaining the black eye. So I guess I will have to use a good blog.

You know Amanda that while you were planning this escapade with your friends and fighting while you did it, THAT, maybe God was watching, and tried to remind you, THAT, ya,all ain't posed to do the shenanagan's that you-all were conspiring in your little P-brains.

The answer

The answer to the trivia question....Mom pretty much got it - Coleman Bryant Boren Sr. (Dad's dad's dad's dad) was the bishop of the Matthewsville (now Glenbar) ward and his clerk was Archibald Orrell Lamoreaux (Mom's mom's dad's dad). Wild, huh?

so...here's what happened.

i was chilling with my peeps on valentine's day.
we were leaving to go toilet paper someone and cause other chaos.
my friend scott and i were fighting over who got the front seat.
pushing. shoving. kicking. biting. -not really-
he opens the car door really fast.
the edge of it comes into contact with my head.
bam. black eye. on valentine's day.
very lame. very epic. very amanda.

p.s. go see coraline. it will greatly improve your life.

What's the Answer?

Okay I give up. After hours and hours of racking my brain, I can't figure out the trivia question. (not true, I'm just too lazy to get out all my geneology, life stories, ancestors information.) So what's the answer??

New Experiences

We had a few interesting things happen lately. First, we were sitting in Sacrament meeting, during the opening song when Kason (age 12, mind you) notices his name on the program as one of the speakers! He had completely forgotten! Talk about scramble! I got out my scriptures, he and I did our best to come up with something while they were doing the ward business and everything, then while he was passing the sacrament I polished it up. After the sacrament he came and got it from me, went up on the stand and gave a really great talk. He pulled it off like a champ! Amazing and nerve-racking!

Then last week, I was driving the boys to middle school, when we noticed lots of police cars and police officers on the street in front of the school, looking at the neighborhood around the school. Since all parents and students seemed to be acting normal, I just dropped the boys as ususal. Then I noticed the helicopter circling overhead and thought, something's definitely going on! So I called the school office and they told me that there was a report of a man with a gun in the neighborhood near the school, and that they had the school on a lockdown situation, they were letting the kids in as usual, but no one was allowed out. So I texted Colby and said you're on lockdown, if you hear gunfire, get down! A little later he called me, he sounded a little scared, and said You've got to come get me, everyone's leaving! I asked how they could be leaving if the school was on lockdown. He said I don't know, but you have to come get me, I don't want to get shot!

Well, to make a long story short, the police soon found the person with the gun, apparently he was just shooting at pigeons on his roof. They called off the lockdown, and Colby as it turns out was just using this opportunity to try to get the day off from school.

Life is never dull.

What, no sound?

Becky, you amazing blog maintenance woman, you, what happened to the music on our blog? I can't hear mine anymore. I loved all the songs you picked out on there - I even put some of them on my ipod.

Saturday, February 14, 2009

Grandpa's going to spread his out over a period of time.

1. I really, really, really do like corn nuts.

2. when I was a senior in highschool I ran the 100 yard dash in 10 seconds flat.

3. I can stand the heat better than the cold.

good day fellow peers.

today for many it is a day of great happiness and elation.
but for some it is a day of horror and heartbreak.
so for that reason today i will be celebrating
anti-valentines day.
all those who wish to participate must follow these simple rules:
1.wear only black to represent the soul you possess.
2. swear off all things valentine.
3. cut your wrists and black your eyes...(the ones who actually do this will be smiled upon, however singing the song will work too)
4. come to my initiation ceremony tonight.

what is the initiation ceremony you say?
tonight all who have been deemed worthy will be invited to drive to my favorite abandoned field, burn candles ritualistically, sacrifice a goldfish by putting it in a bowl and slowly boiling the water, and singing some of my favorite tunes.

so for all those who do not have a valentine out there....just know that there is a place for you in this sickeningly maudlin world.

and its at my initiation party.

Bev's 25 things

This was not easy for me to come up with, but here's my list. I would be interested in reading Darvil's list!

1. I still have all my wisdom teeth, it's why I have so much wisdom.

2. Valentine's Day and Easter are two of my favorite holidays - who could not love hearts, red and pink, and eggs and pastel colors?

3. I have been to 7 other countries. The list isn't done yet though.

4. I am not an animal lover. They are basically a lot of extra work I don't need.

5. I'm a milk-aholic.

6. I'm a choc-aholic.

7. I sometimes think in Spanish without trying to.

8. I like to watch cooking shows and then make the recipes. I have become a pretty good cook that way.

9. In college, my roommates and I would sometimes hang off the side of a train bridge WHILE a train was going over the bridge! Not smart, but we were thrill seekers.

10. We also flew for really cheap to Vegas (from Phx) on a whim to get a free dinner, not knowing we had to gamble for three hours first. CRAZY!!

11. I love to get a spoonful of peanut butter and sprinkle chocolate chips over it and eat it. See #6.

12. I love to read, and if I'm into a really good book I stop cleaning, cooking....even showering! It's bad.

13. I'm not really a morning person and used to be a night owl. Now that I'm older I'm too tired to be a night owl, so what am I? An afternoon person? who knows.

14. I love old movies and old music. Rob says I was born in the wrong decade.

15. I really enjoy shopping. I could do it for a living, I think. Anyone want to hire me to do shopping for you? Not grocery, we're talking home decor. At Home Goods, my favorite store.

16. I would rather step over something than pick it up.

17. I can beat pretty much anyone in Speed or "Spit" as we used to call it. Wanna play?

18. That song "I'm the Mom" or the "Mom song" sung to the tune of the William Tell overture? It makes me cry every time I hear it, I don't know why.

19. I love to go to the movies and eat movie theater popcorn. We go a couple of times a month, usually. Target's popcorn is yummy, too.

20. I hate onions on a hamburger or in a salad, but love onion rings and onion soup and onion dip and those yummy bloomin' onions from Outback! G'day, Mate!

21. I love our real fireplace. If you build a fire, I'll sit down in front of it. It relaxes me.

22. Arizona Mexican food is my very favorite.

23. My favorite color to wear is pink. To look at ( like for my bedroom) is lavendar. I always loved Grandma Hancock's bedroom.

24. I am afraid of heights but wasn't one bit scared to go on a hot air balloon ride- it was amazing.

25. One of my favorite snacks is frozen grapes. I have some in my freezer right now that my kids don't know about - think I'll go have some!

Trivia Question

Let's see how many of you know the answer to this question: Which of our two ancestors served in a bishopric together???
TIME... TIMING is everything. Maybe it's luck. I have been raising 2 turkeys for a year now. They are both Toms (boys). They are so fun and funny. When they were small I'd let them out of the pen and they would follow me around the yard. This continued as they got older. They started to gobble. You can walk outside the house and yell "hey Turkeys" and they'd gobble, or really get them going by coughing or gobbeling yourself and they'd go crazy gobbling back at you. Jason and I went out to take some pictures of them and we had to shoo them away because they were to close for a picture. The smaller one has started wanting to fight the bigger one. Over what?? There aren't any girl turkeys around. I was also getting tired of feeding them. So I talked to my bishop about using his barbeque pit and roasting up a couple of turkeys along with some of the elk we got. I talked to him on Sunday Feb. 8 and planned to use the pit on Friday the 13th. Well on Monday Feb. 9th some dogs got into the chicken pen and killed my 4 chickens and my 2 turkeys. I was really upset. I had planned on butchering the turkeys in a few days, but to have them go this way was different. The chickens were all laying eggs. So is it Bad Luck...Friday the 13th. Is it Bad TIMING....... I guess I'll start over and get some more chickens and a couple of turkeys. And I'll fix the door. Dog Proof it.

It's fun but also heart breaking....

Various new parts had to be put on the car (they gave us a book, basically, of all the work that was done.) A very lengthy process that ended (we hope) well. We have a lifetime guarantee on the work that was done, so I guess any problems will not be our problem!
